How to Make Ultimate Beef Tendon Taco Rice with Staub Pot

Hello everyone, this is Sondo from Kuro5.

Beef Tendon Taco Rice Prep

While I spend every working day handling prime Wagyu cuts in the kitchen of Kuro5, I also deeply enjoy standing in my own kitchen on my days off, taking hours to nurture rich and satisfying meat dishes. One of my favorite home cooking projects is “crafting home-cooked dishes using beef tendon slow-cooked until meltingly tender.”

Beef tendon (Gyusuji) is a powerhouse ingredient brimming with natural collagen, gelatin, and concentrated beef umami. However, many people find it intimidating to cook at home, or only think of traditional Japanese stew (Nikomi) or curry. That is why I am launching our new “Home-Cooked Melt-in-Your-Mouth Beef Tendon Recipe Series”!

For our inaugural recipe, I am sharing the dish I cooked for lunch at home today: “The Ultimate Beef Tendon Taco Rice”! By utilizing waterless cooking in a heavy Staub cast-iron pot, properly defatting minced beef, and seasoning with aromatic S&B curry powder and our secret ingredient—pure honey—this dish elevates everyday taco rice into a luxurious, collagen-packed “edible protein” super-recovery meal. Topped with torched burrata cheese and a sunny-side up fried egg, here is the complete recipe and culinary guide.

1. Starting Our Beef Tendon Series: The Ultimate Beef Tendon Taco Rice

Plated Beef Tendon Taco Rice

Originating in Okinawa, Taco Rice is a beloved Japanese fusion comfort food typically made by topping a bowl of steamed rice with spiced ground beef (taco meat), crisp lettuce, fresh tomatoes, and shredded cheese. While standard taco rice is quick and delicious, standard ground meat can sometimes taste light, grainy, or slightly dry.

Now imagine what happens when you incorporate generous chunks of beef tendon that have been simmered in a Staub pot for 3 to 4 hours until melt-in-your-mouth tender.

The firm texture of lean ground beef merges seamlessly with the rich, velvety gelatin and sweet Wagyu essence of the slow-cooked tendon. The depth of flavor is elevated to a whole new realm—spicy, comforting, and packed with gelatinous body that keeps you reaching for the next spoonful.

2. Step 1: Flawless Meat Preparation (Staub Tendon Simmering & Minced Meat Defatting)

Simmering Beef Tendon in Staub

Great meat cooking begins with meticulous preparation. In this recipe, we use two types of meat—beef tendon and ground beef/pork mix—each treated with professional precision.

First is our star ingredient: Beef Tendon (Gyusuji). Rinse fresh beef tendon briefly under cold water, place it into a heavy French enameled cast-iron Staub pot, and submerge it in plenty of water. Cover with the lid, place over the lowest possible flame, and simmer gently for 3 to 4 hours. Avoid vigorous boiling; keeping a whisper of steam escaping the lid allows tough collagen fibers to break down gently into soft, luscious gelatin. Once fork-tender, remove the tendon and slice into bite-sized pieces.

Second is our Defatting Technique for Minced Meat. Commercial ground meat contains high proportions of fat, which can make the finished sauce unpleasantly greasy. To solve this, place the minced meat into a pot with cold water and heat gently from cold water. As it comes to a simmer, excess fat and scum rise naturally to the surface. Drain the meat through a fine colander, leaving behind clean, flavorful, low-fat protein.

3. Step 2: Staub Waterless Cooking—Extracting Pure Umami from Onions and Mushrooms

Waterless Steaming in Staub Pot

With our meats prepared, we build the aromatic foundation of our taco meat inside the Staub pot using waterless cooking (無水調理).

Coat the bottom of the Staub pot lightly with olive oil (or a small piece of beef tallow) and add finely minced onions and grated garlic. Instead of frying over high heat, cover the pot with its heavy lid on low heat to steam the vegetables in their own natural moisture.

Staub’s airtight seal prevents moisture from escaping, concentrating the natural sugars and sweet aroma of the onions without burning.

Adding Mushrooms to Staub Pot

Once the onions turn translucent and fragrant, add finely chopped Shimeji and Maitake mushrooms. Mushrooms are packed with natural guanylate—one of the three primary umami compounds. When combined with the inosinate of beef and the glutamate of onions and tomatoes, an explosive umami synergy occurs. Cover and steam until the mushrooms are tender and glistening.

4. Step 3: Combining Tomatoes, Beans, and Meats with Zero Added Water

Simmering with Tomatoes and Beans

Once the onion and mushroom base has softened into a rich concentrate, we bring all the ingredients together.

Add crushed/strained tomatoes (passata, canned or aseptic carton). Using strained crushed tomatoes rather than diced tomatoes creates a velvety sauce that clings evenly to every piece of meat.

Next, fold in drained canned mixed beans (kidney beans, soybeans, chickpeas). Their tender, creamy bite provides indispensable texture and protein.

Finally, add the defatted minced meat and the bite-sized tender beef tendon into the pot.

Crucially, we add zero extra water. The natural moisture released by the onions, mushrooms, and tomatoes is more than enough. Simmering the meat exclusively in concentrated vegetable juices guarantees a thick, robust taco meat that is never diluted or watery.

5. Step 4: The Golden Seasoning—Pure Honey & S&B Red Can Curry Powder Synergy

Seasoning with Honey and Curry Powder

With all ingredients in the pot, we season our taco meat using a refined blend of quality staples.

Season with salt and coarse black pepper, then add the iconic Japanese spice blend: S&B Red Can Curry Powder (S&B カレー缶). Composed of dozens of aged spices including cumin, coriander, and cardamom, it instantly infuses the meat with warm, exotic taco aromatics.

And here is the secret touch to Chef Sondo’s recipe: pure natural honey (蜂蜜)! Rather than using brown sugar, white sugar, or ketchup, pure honey provides an elegant, mellow sweetness and active enzymes that soften the sharp acidity of tomatoes and round off the spicy edge of the curry powder. Furthermore, honey combines with the natural collagen of the beef tendon, imparting a gorgeous glossy glaze and profound depth of flavor.

Cover and simmer gently on low heat for 15 to 20 minutes until the sauce is lustrous, thick, and wonderfully aromatic.

6. Super-Recovery Edible Protein: Exceptional Nutrition for Athletes and Fitness Enthusiasts

Beyond its gourmet flavor, this Beef Tendon Taco Rice is a powerhouse “Super-Recovery Edible Protein Meal” designed for athletes, gym-goers, and anyone dealing with daily fatigue.

Beef tendon provides ultra-concentrated natural collagen and gelatin alongside essential structural proteins, nurturing tendons, ligaments, joint cartilage, and skin elasticity after strenuous training.

Because the minced meat was parboiled to eliminate heavy grease, you receive clean, easily digestible animal protein. Paired with plant protein and prebiotic fiber from beans and mushrooms, plus potent antioxidant lycopene from cooked tomatoes, this dish simultaneously supports muscle synthesis, anti-inflammation, and gut health.

7. Finishing & Plating: Avocado, Sprouts, Torched Burrata Cheese, and Sunny-Side Up Fried Egg

Plating with Torched Burrata and Fried Egg

To serve, assemble your taco rice bowl with colorful, luxurious toppings.

Ladle hot steamed rice into a wide bowl. Arrange sliced ripe avocado and a generous handful of fresh broccoli sprouts across the rice. Avocado provides heart-healthy monounsaturated fats (oleic acid) and vitamin E, while broccoli sprouts deliver sulforaphane, one of the most potent cellular antioxidants known.

Spoon the piping-hot beef tendon taco meat generously over the greens. For our special toppings today, crown with fresh Burrata Cheese lightly torched with a kitchen torch to create a smoky, golden crust with molten cream inside, alongside a sunny-side up fried egg with a perfectly runny yolk!

Break the egg yolk, let it blend into the warm, smoky torched burrata cheese and spiced beef tendon, and take a big spoonful with avocado, greens, and rice together—pure culinary bliss!

8. Never Throw It Away! How to Use Leftover Beef Tendon Collagen Broth

Here is an indispensable tip from Chef Sondo: never discard the cooking broth left behind after simmering the beef tendon in your Staub pot!

Rich Beef Bone Broth

This liquid is a pure, concentrated natural bone and tendon broth (bone broth). It cools into a firm gelatin packed with bioavailable collagen and amino acids. Store it in containers in your refrigerator or freezer to use as an all-purpose gourmet base.

A simple pinch of salt and chopped scallions transforms it into a restaurant-quality beef broth. You can also use it as the base for miso soup, noodle dishes, or as the cooking liquid for curries and beef stews to achieve Michelin-level richness at home.
