New Menu: Domestic Keisan-gyu Chateaubriand & Special Butter Sauces

Hello everyone, this is Sondo from Kuro5.

Domestic Keisan-gyu Chateaubriand Steak

Thank you very much for your continuous support of Yakiniku Kuro5. Today, I am thrilled to share the story and culinary philosophy behind our newest masterpiece added to the Kuro5 menu: Domestic Keisan-gyu Chateaubriand & Filet (国産経産牛のシャトーブリアン&ヒレ).

When hearing the term “Keisan-gyu” (cows that have given birth), some meat enthusiasts may recall older impressions such as “lean and tough” or “lacking marbling.” However, thanks to remarkable advancements in Japanese livestock techniques—specifically a practice known as “Re-Feeding” (再飼育 / 再肥育)—modern Keisan-gyu has transformed completely into a premium, deeply flavorful beef with unmatched meatiness and rich satisfaction.

At Kuro5, we have procured the pinnacle of this evolved beef—the exceptionally tender tenderloin and its prime center cut, the Chateaubriand. We serve it in a generous 120g–130g thick steak cut, grilled to plump perfection over Binchotan charcoal, and present a brand new dining style: pairing lean tenderloin with decadent Kuro5 Tare Butter Sauce and Scallion Kimchi Butter. Let us explore the story behind this sensational new dish.

1. Exciting New Menu Item at Kuro5: Domestic Keisan-gyu Chateaubriand & Filet

In the world of beef, the tenderloin (filet) and its exquisite center cut, the Chateaubriand, represent the absolute zenith of luxury. Yielding only a tiny percentage of the total weight of a 500kg cow, tenderloin is naturally low in fat and healthy, yet possesses a delicate texture so soft it can be parted with chopsticks.

Until now, Kuro5 has delighted guests primarily with carefully selected A5 Black Wagyu Kalbi, Loin, thick-cut Tongue, and premium Harami. Driven by our desire to offer our guests a hearty, thick-cut lean steak that delivers an entirely new flavor experience, we established an exclusive sourcing partnership to officially introduce this Domestic Keisan-gyu Chateaubriand to our menu.

Rather than merely serving a high-end cut, we have perfected every detail—from the cut thickness and charcoal heat control to the pairing with rich specialty sauces—to bring out the absolute best of this remarkable ingredient.

2. The Evolution of Keisan-gyu: The Transformative Power of Re-Feeding

Let us delve into what makes modern Keisan-gyu so special.

Traditionally, dairy cows (such as Holsteins) that finished their lactation cycles were processed immediately into inexpensive or ground beef. Because repetitive calving and milking depleted their energy reserves, these cows were often skinny and bony, creating an outdated perception of poor meat quality.

In recent years, forward-thinking Japanese ranchers revolutionized this cycle with “Re-Feeding” (再飼育). Mother cows are retired to nutritious diets rich in high-quality grain and grass for several months to half a year, allowing them to rebuild healthy body mass and recover muscle vitality.

Because these cows have matured over several years, their muscle fibers naturally accumulate high concentrations of amino acids (glutamate, inosinate) and iron. Unlike the sweet melting fat of very young heifers, mature re-fed Keisan-gyu offers an intensely robust, pure red meat flavor and satisfying chew that develops more complexity with every bite. Today, Keisan-gyu is celebrated by top chefs worldwide as a sustainable, deeply flavorful gourmet beef.

3. Most Tender and Healthy Cut: Kuro5’s Exclusive Route for Filet & Chateaubriand

Among all the cuts available from re-fed Keisan-gyu, Kuro5 specifically focuses on the Tenderloin (Filet / Chateaubriand).

Located on the inner spine, the tenderloin is a non-weight-bearing muscle that experiences virtually no exercise during the cow’s life. Consequently, it develops no tough connective tissue or coarse grain, making it the most tender cut in the entire animal. Unlike heavily marbled sirloin or ribeye, it is naturally lean, high in protein, and exceptionally healthy.

While Keisan-gyu is typically sold as whole carcasses or large blocks, Kuro5 has established a dedicated procurement pipeline allowing us to selectively source only the premium tenderloin and Chateaubriand portions.

Selected with our uncompromising standards, our Keisan-gyu tenderloin displays a remarkably fine grain and a vibrant, glistening crimson texture.

4. Generous 120g–130g Cut: Binchotan Charcoal Grilling and Tableside Slicing

Charcoal Grilled Chateaubriand Steak

When you order our new Chateaubriand, you will be greeted by an impressive 120g to 130g thick steak cut.

To cook this thick cut to perfection, we rely on Kuro5’s signature Binchotan charcoal grill.

Lean beef can become tough if seared too harshly over open flames, or dry out if cooked too slowly over weak heat. At Kuro5, our trained staff utilizes the intense radiant heat and far-infrared rays of Binchotan charcoal to sear the exterior into a fragrant crust while sealing all moisture within.

Far-infrared heat penetrates gently into the center of the steak, plumping up the meat fibers and preserving maximum juiciness and tenderness. Once grilled to medium-rare perfection, the steak is sliced into bite-sized pieces to showcase its ruby-red interior, then served immediately with our warm specialty butter sauces.

5. A New Culinary Concept: Pairing Lean Chateaubriand with 2 Rich Butter Sauces

Here lies the heart of Kuro5’s culinary innovation: our bold approach to flavor pairing.

When enjoying heavily marbled A5 Wagyu, standard practice calls for refreshing condiments like wasabi, sea salt, or lemon to balance the intense fat content.

However, because Keisan-gyu Chateaubriand is remarkably lean and pure, Kuro5 dares to propose a revolutionary concept: pairing lean, delicate tenderloin with rich, buttery, savory sauces.

When the bold depth of red meat meets the velvety richness of butter and savory aromatics, the flavors fuse into a luxurious, harmonious profile reminiscent of French haute cuisine. To achieve this synergy, we created two bespoke dipping sauces.

6. Signature Sauce 1: Kuro5 Tare Butter Sauce—Sweet, Savory, and Creamy Harmony

Our first sauce is the Kuro5 Tare-based Butter Sauce.

Kuro5’s secret tare sauce—crafted with artisanal soy sauce, aromatic vegetables, and natural fruit sweetness—has been a customer favorite since our founding. We blend this secret tare with premium dairy butter and gently emulsify it over low heat.

Coating charcoal-seared Chateaubriand in this sauce delivers an intoxicating aroma of warm dairy butter followed by the sweet-savory punch of our secret tare. The butter coats the lean fibers, creating an explosion of umami that will make you smile from the very first bite.

7. Signature Sauce 2: Scallion Kimchi Butter—Zesty Crunch and Spicy Tang

Our second offering is Kuro5’s original pride: Scallion Kimchi Butter (ネギ入りキムチバター).

We blend rich compound butter with finely minced artisanal kimchi and fresh, crisp scallions in a golden ratio.

When placed atop piping hot Chateaubriand, the compound butter slowly melts across the steak. The pleasant spicy heat of fermented kimchi, refreshing lactic acidity, crisp scallion bite, and creamy butter work together to create a vibrant, multi-layered flavor profile that leaves a remarkably clean finish.

Alternating between the sweet-savory Tare Butter Sauce and the zesty Scallion Kimchi Butter ensures that every single bite of your 120g–130g steak remains an exciting culinary discovery.

8. Ideal for Lean Meat Lovers and Health-Conscious Diners

For diners who find heavily marbled beef too rich, or for health-conscious guests and fitness enthusiasts seeking clean, high-quality protein, our Domestic Keisan-gyu Chateaubriand is the ultimate choice.

Tenderloin provides exceptional protein with minimal fat and calories. Furthermore, re-fed beef is packed with essential iron, L-carnitine, and vitamin B complexes that support energy metabolism and vitality.

You can enjoy the light, easy-to-digest nature of lean beef while indulging in the luxurious satisfaction provided by our specialty butter sauces—a flawless balance of wellness and gourmet enjoyment.
